Biloxi Blues Buster – Organic Carrot Soup
Here’s a organic carrot soup recipe:
2 tablespoons organic sunflower oil
1 organic onion, peeled and finely sliced
500g organic carrots, peeled and finely sliced
2 tablespoons fresh ginger, peeled and finely sliced
1 tablespoon fresh organic Basil, chopped
2 organic vegetable stock cubes, made up with 900ml boiling water
1 tablespoon organic honey
15g organic butter
Heat the oil in a large saucepan then add the onion and fry for about 5-8 minutes until softened but not brown
Next add the carrots and ginger, cook for a further 5-10 minutes.
Add the stock and honey, bring to the boil then cover and simmer for 30 minutes.
Allow to cool slightly then add the butter. Pour into a food processor and blend to a smooth puree. Reheat gently for 1-2 minutes.
Place in warmed serving bowls, sprinkle with Basil and serve with warm organic bread.
All that lovely Beta-Carotene, stomach soothing Ginger, calming Basil and general organic goodness just chases the blues away.
