Sweet Potato Zucchini Bread

1 cup Sweet Potatoes (or use 2 baked sweet potatoes)

2 cups all-purpose flour

1 1/2 tsp. ground cinnamon

1 tsp. baking soda

1/4 tsp. baking powder

1/4 tsp. salt

1 1/2 cups sugar

3/4 cup vegetable oil

3 eggs

1 tsp. vanilla extract

2 cups grated zucchini

1 cup chopped walnuts or pecans


Let’s Bake

Preheat oven to 350ºF. Now coat a 9x5x3-inch loaf pan with cooking spray. Mix sugar, oil, vanilla and eggs in a large bowl, then fold in sweet potatoes, nuts and zucchini. In a different bowl, sift flour, cinnamon, baking soda, baking powder and salt. Add first mix to the flour mixture and stir thoroughly, but don’t over mix. Pour into loaf pan, then bake 1 hour and 15 minutes or until a tooth pick inserted in the middle comes out clean. Don’t forget to cool before removing from the pan and serve.
